Pizza Casserole



You can't beat the flavor of pizza and pasta together and my family enjoys eating both.  I overheard someone say they were making a pizza casserole for dinner and it piqued my interest enough to search the internet for a recipe.  I learned that there are many different kinds of varieties of this dish, just like pizza.  I tweaked a couple of recipes and made my own pizza sauce for mine, but I forgot to add the black olives! 

Ingredients:

16 oz. Rotini Noodles (cooked)
1/2 lb. lean ground beef
1/2 onion chopped
1 green bell pepper, chopped
2 cloves of garlic, minced
1 cup of sliced turkey pepperoni
Black Olives
16 oz. pizza sauce
4 T. milk
Shredded Mozarella Cheese

Preheat oven to 350 degrees.  In a skillet over medium high heat, brown the beef with the onion, garlic and green bell pepper. Drain excess fat.  Stir in cooked noodles, pepperoni, black olives, pizza sauce and milk.  Mix well.  Pour into a 13 x 9 dish and bake for 20 minutes.  Then top with cheese and bake for 10 more minutes.

Here's my recipe for homemade pizza sauce:

12 oz. tomato paste
1 cup of red wine or water
2 t. oregano
2 t. salt
2 T. sugar
2 T. olive oil
4 T. parmesan cheese
fresh garlic to taste (I use 2 - 3 cloves)

Simmer all ingredients for 10 minutes over medium low heat.

Serve with garlic bread and a side salad and enjoy!
