Snickerdoodle Scones

My kids love these for breakfast.  If I can make scones, so can you.  Super easy recipe.  They taste just like snickerdoodle cookies, only bigger!

Ingredients:
1/2 cup sour cream
1/2 tsp. baking soda
2 C. flour
1/2 c sugar
1 tsp. baking powder
1/3 tsp. cream of tartar
1/2 tsp. salt
1/2 c butter
1 egg
2 tsp. cinnamon
cinnamon sugar to sprinkle on top

Combine sour cream and baking soda in a small bowl and set aside.
Combine flour, sugar, baking powder, cream of tartar and salt in another bowl.
Cut in butter until it becomes like fine breadcrumbs.
Combine egg with our cream mixture and add cinnamon.  Stir into flour mixture and mix.
Place on a baking sheet and pat into a 3/4 inch thick circle.
Cut into 8 wedge shaped pieces and separate slightly so they don't touch.
Dust with cinnamon sugar.
Bake at 350 for 20 minutes.

Tabouli or Tablouleh or Tabbouleh

My mother learned this recipe from an Armenian friend of hers.  She didn't make it very often, but when she did, we devoured it.  Not everybody likes the texture or the taste, and in my household, I'm the only one that eats it.  It's a Middle Eastern dish and I usually serve it as a side dish.  In my opinion, it's refreshingly delicious!

Ingredients:

3/4 cup bulgur wheat
2 cups of cold water
3 green onions
2 cups of chopped fresh Italian Parsley (flat leaf)
1 chopped cucumber
1 chopped tomato

Dressing:
1/4 cup lemon juice
1/4 cup olive oil
1-1/2 tsp. salt

Pour bulgur wheat into medium bowl and cover with cold water.  Allow to soak for a few hours or overnight.  Then strain bulgur and if necessary pour onto a tea towel and allow to dry a little.  Pour bulgur into a large bowl and add green onions.  Add chopped parsley, cucumbers, and tomatoes.  Pour lemon juice dressing on top.  Cover and chill for atleast 1 hour.  Add more dressing upon serving if necessary.

Pizza Casserole



You can't beat the flavor of pizza and pasta together and my family enjoys eating both.  I overheard someone say they were making a pizza casserole for dinner and it piqued my interest enough to search the internet for a recipe.  I learned that there are many different kinds of varieties of this dish, just like pizza.  I tweaked a couple of recipes and made my own pizza sauce for mine, but I forgot to add the black olives! 

Ingredients:

16 oz. Rotini Noodles (cooked)
1/2 lb. lean ground beef
1/2 onion chopped
1 green bell pepper, chopped
2 cloves of garlic, minced
1 cup of sliced turkey pepperoni
Black Olives
16 oz. pizza sauce
4 T. milk
Shredded Mozarella Cheese

Preheat oven to 350 degrees.  In a skillet over medium high heat, brown the beef with the onion, garlic and green bell pepper. Drain excess fat.  Stir in cooked noodles, pepperoni, black olives, pizza sauce and milk.  Mix well.  Pour into a 13 x 9 dish and bake for 20 minutes.  Then top with cheese and bake for 10 more minutes.

Here's my recipe for homemade pizza sauce:

12 oz. tomato paste
1 cup of red wine or water
2 t. oregano
2 t. salt
2 T. sugar
2 T. olive oil
4 T. parmesan cheese
fresh garlic to taste (I use 2 - 3 cloves)

Simmer all ingredients for 10 minutes over medium low heat.

Serve with garlic bread and a side salad and enjoy!
